Freeze-drying is carried out in a vacuum at a very high temperature and also at an extremely low temperature under dry processing conditions. An initial drying phase, called primary drying, eliminates the water (and ice) by sublimation. The second phase, secondary drying, eliminates the remaining water by desorption. This effectively preserves the colour, aroma, taste and shape of fresh food, while preserving the product's nutrients and vitamins.
